Apricot + Rosemary ‘Meatballs’ With Creamy Orzo
Ingredients: 1 litre (4 cups) vegetable stock 320g (11.3oz) orzo 4 tbsp nutritional yeast 150g (5.3oz) vegan cream cheese 1 lemon, juice only 1 large handful of basil, leaves picked For the meatballs: olive oil 1 onion 4 garlic cloves 100g (1 cup) walnut halves 2 x 400g (14oz) tins of borlotti beans, drained + rinsed 1 lemon, zest only 2 sprigs of rosemary, leaves picked 100g (1/2 cup) dried apricots 2 tbsp soy sauce, see notes 80g (1/2 cup) breadcrumbs Credits: @sovegan

VEGAN KAISERSCHMARREN🥰 🫶RECIPE (4 servings, 20min prep time): -the water of 1 can chickpeas -1/2 Tsp each baking powder and corn starch Whip it up until stiff peaks. -180g flour -5 Tbsp sugar -1 cup (250ml) plant milk -1 Tsp baking powder -2 Tbsp apple sauce Whisk. Then stir in the Aquafaba. Heat up oil or v. butter in a big pan and add half of the batter. Put the lid on for about 5mins.
