The Royal Bakery - It's Top Tip Tuesday! I love quilted tiers, and have a couple tricks up my sleeve for a neat finish. I use the Patchwork Cutters Diamond Side Embosser because it gives a really sharp indentation and is easy to handle. http://amzn.to/2llQI3S The Embosser is 5" tall, and my cakes are generally a bit less than that. This means the Embosser is taller than my tier. And THAT means the pattern extends off the top. This is no good. I want the diamonds to meet right at the top of my tier. I don't mind if the pattern's not quite complete at the bottom because it's less noticeable and I might use a border to disguise it. So my first tip is to raise the tier up a little (pic 1). I use an upturned cereal bowl, secured with non-slip shelf liner. See how the pattern can now line up perfectly with the top edge of the tier, and the Embosser has room to extend past the bottom? (I also use my smoother on top of the cake to flatten the bump the Embosser leaves on the top edge.) My second tip is for adding extra indentations to your quilting (pic 2). The Embosser comes with cute little extras that you can stamp at the cross sections, but I love using my Dresden tool (or a toothpick) to make extra little tucks. Yep, it's time-consuming, but I love the result. You can cut the time down dramatically if you make, say, all the left hand indentations first, then all the right hand ones. That way, you're not repositioning the tool in your hand each time you need to press it into the fondant. Try it. You'll see what I mean! | Facebook
