1 cup unsweetened almond milk 2 large eggs (or Tbsp. ground flax seed + 4 Tbsp. water for vegan version) 1 large ripe banana 1 tsp. pure vanilla extract 1 tsp. baking powder, gluten-free 1/2 tsp. ground cinnamon 1 dash sea salt (or Himalayan salt) 2 cups old-fashioned rolled oats, gluten-free 1/2 tsp. extra-virgin organic coconut oil 3 cups fresh mixed berries

Ingredients2 eggs1/3 cup dry oats1 scoop vanilla protein powder2 T unsweetened almond milkoptional: 1/8 tsp cinnamon and 1/2 tsp vanilla extractInstructionswhisk together liquid ingredients (eggs, vanilla if desired, and almond milk - you may use slightly less or slightly more than 2T depending on the consistency you desire).Add in oats and protein powder.Cook in a heated skillet, I use a non-stick canola spray first.Drop into skillet in 1/4 cup portions, this makes about four pancakes.
