Teriyaki Beef Skewers from Food.com: I needed a beef appetizer for a holiday party and could not find a suitable recipe in my normal places so I found a recipe in the halls of the WWW and modified it to my needs. This was a winner with the carnivores and pairs well with a Washington Pinot Noir
Cheesy Herb and Beef Bites: 10 thin slices roast beef, about 4” in diameter 1/4 c garlic-and-herbs spreadable cheese 1/4 c finely chopped red bell pepper 2 cucumbers, cut into 40 slices Spread each beef slice with 1 tsp cheese and 1 tsp red bell pepper. Carefully roll up. Cut each roll into 4 pieces. Place each beef roll on cucumber slice. Serve immediately.
