Oven Baked Carrot and Sweet Potato Fries. Cut sweet potatoes and/or carrots into 1/2" wide strips. Toss in 2 tablespoons olive oil, 2 tablespoons dried herbs (try parsley, rosemary, or thyme), light salt and pepper. Bake at 400 degrees for about 35-40 minutes, or until golden brown and crisp.
