Baked Scallops (serves 6): 2 lbs scallops rinsed & drained, salt, 4 tbsp unsalted butter, melted , 1/2 cup bread crumbs, 2 to 3 tbsp chopped parsley, 2 garlic cloves crushed, 3 tbsp olive oil, S Preheat oven to 400ºF. Place scallops, melted butter & garlic in a bowl, season w/ S to taste. Stir gently to combine. Transfer to a baking dish. Combine bread crumbs, parsley and olive oil in a bowl. Sprinkle this mixture over the scallops and bake in 400 oven for 15 min until firm & browned.
