4c raspberries ¾c sugar ¼c lemon juice 2 eggs 4 egg yolks 1 tsp vanilla pinch salt ¼c butter 1. Puree raspberries. Strain seeds. Mix strained puree w sugar & lemon in saucepan. Heat 1-2 mins. 2. While raspberry mixture is heating, whisk eggs/yolks. Temper eggs by adding 1/4 c heated raspberry puree. Pour eggs into saucepan. Whisk constantly and heat until curd reaches 170 degrees F. Strain out lumps. Add vanilla & salt. 3. Cool to room temp. Beat in butter. Chill.
