 • 1 1/2 cups uncooked white jasmine rice*
 • 2 1/4 cup low sodium vegetable broth
 • 1 tbsp olive oil
 • 1/4 cup shallot, finely diced
 • 2 cloves of garlic, minced
 • 2 cups roughly chopped baby bok choy (for me, this was 1 bunch)
 • 2 cups baby spinach
 • 1 tsp ground turmeric
 • 1/2 tsp sea salt, more to taste
 • 1/4 tsp black pepper
 • 1 (14 oz) can full fat coconut milk (both watery and creamy parts)
 • 2–3 green onions, diced

Ingredients For Cashew Curry:
 • 1 can full fat coconut milk ⠀
 • 1 cup raw cashews OR peanuts ⠀
 • 1-3 tbsp red Thai curry paste (depending how strong of a curry flavor you like)
 • 2 tbsp gluten free soy sauce OR coconut aminos ⠀
 • 2 tbsp rice vinegar ⠀
 • 2 tbsp coconut sugar (optional)
 • 1 tbsp sesame oil ⠀
 • 2 tsp sriracha (add more if you like it spicy)⠀
 • Juice of 1 lime ⠀
 • 1/4 tsp ground ginger ⠀
 • Pinch of red pepper flakes ⠀
 • Sea salt, to taste

INSTRUCTIONS:
 • Add all ingredients to a high speed blender and blend until smooth.
 • Serve with your favorite protein, veggies, and/or grains. Store leftovers in an airtight container for up to 5 days, or in the freezer for up to 2 months.

Ingredients:
 • 1 lb salmon filet
 • Salt and pepper, to taste
 • 3 tbsp melted butter
 • 1/3 cup bread crumbs (gluten free if needed)
 • 1/2 tsp italian seasonings
 • 1/4 tsp garlic powder
 • Zest of 1/3 of a lemon
 • 1 tbsp grated parmesan
 • Lemon slices
