RENEWED REVIVAL — 1½ oz | 45 ml TLE Blanco Tequila 1 oz | 30 ml Fresh Lemon Juice ¾ oz | 22.5 ml Spiced Pineapple Syrup Smoked Salt Rim Lemon Wheel Garnish Pineapple Fronds Flamed Cinnamon Stick Garnish TLE Espadin Mezcal Rinse — Rinse a rocks glass with Mezcal and rim with smoked salt, set aside. Combine ingredients except garnish in a shaking tin with ice. Shake and strain over crushed/pebble ice rocks glass. Garnish with pineapple frond and a flamed cinnamon stick. — SPICED PINEAPPLE SYRUP — Rind + Core from 1 Pineapple (Washed) 350g Demerara Sugar 50g Water 3 Cinnamon Sticks 5 Cloves 3 Star Anise 1 Pinch Salt — Combine all ingredients in a cambro and let sit overnight until sugar is completely dissolved. Bottle and store in fridge. Use within 1 week.
Pomme Brulee Old Fashioned
It’s about time we brûlée some apples for an Old Fashioned. We created an Old Fashioned thats sure to please this season. Flavors of cinnamon, caramelized sugar and apples play together perfectly with Rabbit Hole’s Dareringer bourbon, which is finished with PX sherry casks and has notes of oak, dried fruit and caramel. Who needs a white linen when you can make it pink? Together with my friends over at empress1908gin, we put together a spin on a traditional White Linen with Empress Elderflower Rose Gin.
