Copycat Purely Elizabeth Granola

Chia egg (1 tbsp chia seeds + 2 tbsp water)
1/3 cup coconut oil
1/4 cup monkfruit sweetener 
1/4 cup maple syrup
1 tsp vanilla
2 cups gluten free oats
1/2 cup uncooked quinoa
1/4 cup flaxseed
1/4 cup raw sunflower seeds
3 tbsp chia seeds
Lots of cinnamon

Method:
- Make chia egg and set aside (1 tbsp chia seeds + 2 tbsp water)
- Combine oats and quinoa in a large bowl. Blend 1/2 of the mixture until it turns into flour. Pour back in the bowl. 
- Add coconut oil, monkfruit sweetener (or coconut sugar), maple syrup, and vanilla extract into the bowl and stir. 
- Add chia seeds, flaxseeds, sunflower seeds, and chia egg and mix. 
- Spread mixture on a large baking tray and flatten so it cooks evenly.
