Ingredients:

Syrup:
1 C. Coconut Water
1 C. Sugar

Coconut Milk:
Half Coconut Meat
Half Coconut Water
1 C. Hot Water

Sorbet:
1 C. Coconut Syrup
½ C. Coconut Milk
3-4 Guava,peeled, deseeded and chopped

Method:
1. Start by breaking down your coconut. With a hammer, smack the coconut while rotating until it cracks all the way around. Split it apart, and pour the water into a bowl, strain it through cheesecloth to make it clear. 
2. Heat a pot of water, and place the coconut halves in a strainer, over the hot water to steam. Steam each half for about 10 minutes, then let cool. You should be able to pry the flesh from the shell.
