Do you have to soak beans before cooking them? Now, full disclosure: I’ve usually subscribed to the overnight-soak school of thought. While not scientific by any means, I’ve found that soaking overnight sits right in the sweet spot between long enough and not too long. It seems to improve their texture and make them more palatable. This is a supremely simple method for turning dried black beans into creamy cooked ones. You can add the step of soaking in advance if you prefer, as it will speed up the process. Know that cooking time can vary considerably, so keep an eye on the pot as they approach doneness.

Love beans but don't love how they can give you gas and bloating? Me either! Let me show you how to cook beans by soaking first overnight with some lemon juice or whey (not with baking soda). This method isn't quick, but it's simple without much hands on time. Whether you cook them in the Instant Pot or slowcooker / crockpot, I think you'll be surprised how well they taste!
