This tart was a great favorite in the Manchester area during the wartime era. Its origins go back to the 1800s when it was called a pudding, but because the recipe uses pastry dough, it became known as a tart.

The Manchester tart is an easy custard and fruit tart adorned with toasty coconut. Fresh raspberries elevate it to a dinner party pudding.

Manchester tart was a school dinner favourite for us and we’ve teamed it up with a flapjack to make what we hope will be a new classic. The flapjack base has a bit of flour and egg added to give it a slightly firmer texture. Then the topping has all the delights of a classic Manchester tart – custard, raspberry jam and coconut. And don’t forget the cherries. Epic!

The Manchester Tart made regular appearances in the 1980s for me, featured as it was on my weekly school dinner menu. I’m guessing it showed up often because a jar of jam, some Bird’s instant custard, and a pastry case were cheap to source and made for a quick and simple dessert to satisfy herds of hungry little faces.
