Cooking for a crowd
Easy Raspberry and white chocolate cake can be prepared without the need for a mixer! Raspberries and white chocolate flavours work so well together giving the cake a decadent yet fresh taste. I'm only using a drizzle of white chocolate but you could double, or even triple, it up for a more decadent topping. Serve it up slightly warm with a few extra fresh raspberries, this makes the perfect Sunday afternoon cake.
I LOVE a crumble cake. The crumble topping on this Cherry Crumble cake is AMAZING, you have to try it! The light sponge of a cherry cake combined with the buttery, crunchiness of a crumble pudding. The addition of soured cream in this recipe makes for a richer, more tender cake. You can replace with buttermilk or greek/natural yoghurt if you want to.
Southern squash casserole is a comforting side dish casserole, often served during the holidays, with tender, cooked yellow squash, onions, sour cream, and cheddar cheese topped with crushed buttery crackers. This squash casserole is not just for summer. It makes a great side dish for Thanksgiving and other holiday dinners as well.
Creamy Chicken and Vegetable Pie topped with puff pastry. This is pure comfort food bliss! We're going shop-bought on the puff pastry and homemade on the filling, and oh my gosh, this filling is sooooo good. I could literally eat it by the ladle full. Bake for around 25 minutes until golden brown.
These Homemade Crunchy Roast Potatoes are the best! Our family considers them an essential component of any roast dinner! Plus tips on making ahead! I want that crunchy exterior you can only get from fluffing up those edges and letting them bubble away in hot fat, with a fluffy, light interior. It's amazing how much a potato cooked in oil with salt can make me salivate at my keyboard.
These Stuffed Mushrooms are my absolute favourite! For me it's Mediterranean style ingredients, grown under bright sunshine like tomatoes, olives and peppers. Lush dark green leaves, heart-healthy beans and pulses. A cuisine that makes the most of vegetables, but can also include simply prepared meats and tangy or creamy, indulgent cheeses. #glutenfreevegetarianfood #glutenfreedinner #tuscanmushrooms #mushrooms
A Tuscan soup is basically an Italian-style soup that contains beans, kale and vegetables. The famous Zuppa Toscana contains Sausage and or bacon. This version is my chicken version. Serve it with some granary toast for a filling meal. #tuscansoup #chickensoup #bowlfood #chicken #soup #comfortfood #zuppatoscana
Easy Tuna Pasta Bake - tuna with pasta, peas and sweetcorn in a lovely creamy, cheesy sauce. It's an easy meal that everyone loves - made with mostly store-cupboard ingredients! Pasta, sweetcorn, tuna fish - all make up the bulk of the meal. Frozen peas are a great addition too - but you can use canned or fresh if you like. Apart from that, we're really just talking milk, cheese and a bit of butter from the fridge.
Turkey Mushroom and Pancetta Risotto is a great way to use up your leftover Turkey! This sensational dish is rich and creamy with crispy pancetta and mushrooms, and is Gluten Free. You’ll want to make a larger turkey this year to ensure you have plenty of leftovers to make this at least once, maybe twice!
These Tender Slow Cooked Ribs are one of our family favourites in the summer! Check out how we get layer upon layer of flavour with fall-apart meat. The meat really does fall off the bone, so make sure you use a sharp knife to gently cut through. Fall apart pork ribs with a golden crispy exterior, covered in a sweet, sticky sauce. The best ribs I've ever tasted.
A delicious homemade lasagne with rich beef ragu, creamy béchamel and golden cheese topping. A comfort food classic. One hour from start-to-finish (and half of that's in the oven) and you can be serving up a big meaty-cheesy dish of lasagne, with enough for second helpings. Because we all want second helpings when it comes to lasagne right?
This recipe will show you how to make guacamole easily in under 10 minutes. It has just the right balance of creamy avocados with finely chopped mild, sweet onions, with chillies and garlic adding a dash of flavour. A few ingredients are all you need to make the best guacamole as a side dish or dip. The perfect dip for some crunchy tortilla chips or crackers. Spread it on toast or wrap it in a tortilla.
Simple ingredients that come together quickly, then we can leave the crockpot to do its work - all resulting in a rich beef curry. This particular curry has all that rich flavour, but is pretty mild, and made simple, using store-bought curry paste. Be sure to click through to the post to get the full recipe and instructions!
Simple spaghetti tossed together with golden fried garlic-bread-crumbs, plus a hint of chilli and lemon, all finished off with a sprinkling of parmesan. A revelation of a dinner - ready in 20 minutes. #spaghetti #garlicbreadcrumbs #garlicbreadspaghetti #italianrecipes #20minutedinner #weeknightrecipes #quickrecipes
Tender pan-fried salmon with spaghetti and a little courgetti (spiralized courgette/zucchini) in a creamy tomato sauce. An easy weeknight dinner! This is my way of making 3 salmon fillets stretch to feed four people, and also getting a little extra veg in there by mixing the courgetti with the spaghetti instead of replacing it entirely.
Homemade Satay Sauce is easy to make in just 10-minutes! Satay Sauce Recipe makes a great dip for chicken, pork or vegetable skewers. Smooth and creamy with a little chilli kick! A traditional Indonesian Satay would use roasted peanuts that have been ground by hand, for this version we use store bought peanut butter. You can leave the chilli flakes out entirely if you prefer. I like it a little spicy, but it's completely up to you.
Baked chicken parmesan that’s tender and juicy inside and crispy on the outside. Adults and kids alike LOVE this Italian classic. It’s that perfect combo of crispy chicken with rich marinara sauce, stretchy melted mozzarella and a nice big pile of spaghetti. Carbs+Fat+Salt+Crunch+Tang – it’s got it all!!
This Vegetarian Summer Tomato Pizza with Basil Garlic Butter and creamy cashew drizzle is a meal even the meat-eaters will love. The homemade no-knead, no-prove flatbread base is super quick to make! Serve it with extra basil garlic butter, and those meat-eaters will be licking their lips and demanding seconds!
This Homemade Chilli Con Carne is the perfect blend of spices, beans and extra veggies, means you can make a pound of minced beef feed 8 people! We love this belly-warming dish of meaty, spicy chilli. It's a regular on our dinner table. This is a great summer dish, too. It's a perfect topping for hot dogs or burgers fresh off the grill!
My favourite recipe for Crispy Pork Gyros - including how to get that perfect crispy-on-the-outside and tender-on-the-inside meat! Honestly, that juicy meat, refreshing tzatziki and handful of cheeky fries all wrapped up in bread heaven, is delightful. Serve the pork on flatbreads with lettuce, tomatoes, red onion, tzatziki and a few french fries if you like.
My Slow Cooked SUMMER Beef Casserole is a lighter casserole with crunchy veg and parmesan. Only 10 minutes of hands-on time, then the rest of the time is in the oven or the slow cooker. I love to serve it with couscous and a few slices of freshly chopped red onion. A delicious easy casserole you can enjoy in the Summer months too!
