Lukanka is a type of sausage. Consumed raw and dried. The exterior is evenly covered with white nobley mold whereas the inside, the dry sausage has a characteristic mosaic structure. These raditional sausages made from a mixture of pork and beef and spices (black pepper, cumin, salt), and stuffed into beef rounds. After preparation it's left in a closed, well-ventilated room to dry. In the drying process it's compressed in order to obtain the characteristic flattened shape.
