Serves 5-8 Beet 8 Large beets ⅓ Cup chopped parsley ⅓ Cup chopped walnuts ½ Tsp salt 2 Shallots sliced thin Balsamic Vinaigrette 3 Tbsp balsamic ⅓ Cup olive oil 1 Small shallot 1 Tbsp honey ½ Tsp salt Pinch of pepper ½ Tsp mustard Whipped Goat Cheese 8 Ounces goat cheese 2 Garlic cloves finely minced or grated ½ Lemon juiced ¼ Cup milk Optional: 4-6 slices of toasted bread.
