• 1/3 cup Italian plum tomatoes, canned

• 1 Parsley sprigs or chopped parsley, Fresh
• 1/4 tsp Thyme
Canned Goods
• 1 cups Chicken stock
Baking & Spices
• 1 Salt and freshly ground pepper
Oils & Vinegars
• 1 tbsp Olive oil or good cooking oil
Beer, Wine & Liquor
• 1/3 cup Brandy, good
• 3 cups Young red wine
Other
• Beurre manié for the sauce (1 1/2 tablespoons each flour and softened butter blended to a paste)
• 1/2 cup (4 ounces) lardons (see note)
