  • This combo is unreal and just the thing for an easy, colorful side dish for Easter. The whipped hot honey goat cheese is delicious with the carrots but could be added to your plate and paired with a smoked ham or potatoes too.

  • I love fresh thyme and was lucky to have some overwinter in my backyard making it easy to pop out there and add it to my recipes. These small, colorful carrots are so easy to drizzle with oil, salt, pepper and thyme. I roasted them at 400 for 30 minutes & made the whipped goat cheese while they were in the oven. The goat cheese has red pepper, honey and drizzled with olive oil and a little bit of thyme to finish. Place everything in a bowl, I used my kitchen aid & whip together until thoroughly combined.
