Paletas de Cafe (Coffee Ice Cream)
It’s officially summer so I’m bringing back my paleta series! I’m adding 10 more paleta recipes to this series, starting today with paletas de cafe (coffee paletas). I’m starting with coffee because it’s my husband’s favorite ice cream flavor, but also because I want to start off with something thats both energizing and cooling for this summer heat!

These paletas de nuez are sooooo creamy and delicious! I love anything that has a nutty flavor- especially combined with milk! Today I am using pecans but walnuts are another popular choice.

Patbingsoo Paleta (Red Bean Popsicle)
It’s day 1 of my paleta series! This is my FAVORITE fusion creation ever- I LOVE patbingsoo and I can’t believe how easy it is to make it into a paleta, one of my favorite summer snacks! These are seriously SO good.

These mango & chamoy paletas are one of my favorite icy treats to enjoy during the summer! “Paleta” is the Spanish word for popsicle or lollipop, and I love them because they use natural ingredients and can be a healthier snack, depending on the flavor.
