I’m at 6,800 ft in elevation for reference. 250g active starter with 650g room temp water. Mix till milky. Add 700g All Purpose flour/unbleached 300g Whole wheat flour and mix with hand, cover and let sit for 1.5 hrs… so flexible Add 25g salt and mix with hands again. Lightly knead in bowl till dough comes together. Let sit covered in a warm place. Like a fireplace mantel. Stretch and fold every 30 min or so…..be flexible….for next few hours. Let rise till double. Cut in half with a bench scraper and gently form tension by pushing and pulling dough into balls. Let rest for 20 min uncovered. Flip over with bench scraper and gently fold one side on to the other, then gently roll the dough with seam in the middle. Form into a ball with tension from your counter by pushing and pulling dough. Let sit 20 min and repeat. Put in a towel lined basket with a little flour and cover. Put in fridge for 2-12 hours. When ready to bake place on parchment paper. Bake at 450 degrees in hot cast Iron dutch oven. Add a little water to pot for steam to give a better crust. Bake for 30 min, then take lid off and bake another 10 min. Shut oven off, leave in oven another 5 min. Let bread rest on counter until fully cooled. I made them to have with homemade Sloppy Joe’s, broiled Broccoli, and Trader Joe’s Organic corn chips! Yummo! This can also be done in a mixer or by hand. Mix together 50g active starter 270g warm water 15g honey In a Separate bowl 500g flour 10g salt 60g butter ( I used Earth’s Balance, dairy free) Add wet ingredients to dry ingredients. Form a ball and let rest 15-30min Knead for 5-8 min Place in bowl. Cover with plastic wrap and a tea towel. Put in the fridge overnight. So remember to think ahead when you want to make these. When you are ready to bake, cut into 16 portion sizes and form into balls. Place on parchment and let rise 1-2 hours. Depending on temp in your house. Bake at 375 for 25-30 min Enjoy!
